Our Anniversary!

Hey Everyone, Sorry we haven't blogged in a while! This is Mandi by the way. Shane normally does the blog posts, but he's been so busy with work and school lately! Just to get you caught up. Shane is going to school getting his pre-req's out of the way so he can start the cooking program in the fall! He is also working as a prep chef, and loving it!

So This year for our Anniversary we started with a yummy breakfast we made together, we got the idea from pintrest, but did our own twist on it! Then we went kayaking, had a picnic for lunch, then went out to dinner at out FAV restaurant!



So For Breakfast we had some Dannon Oikos Raspberry Greek yogurt and added fresh Mango YUM!
We Aslo had some egg and bacon cups That Were Divine!

Eggs & Bacon Cups: (Proportions are up to you!)

Start by cooking your bacon in a skillet, only cook it HALF way through!
Next take the bacon out to let cool on a paper towel or cooling rack with cookie sheet underneath (To catch grease)
While bacon is cooling preheat oven to 375 degrees
We used a tortilla cut into a small circle to sit on the bottom of our cupcake tin, to hold the whole cupcake together (The original recipe used wheat bread which would also work)
We used an old glass jar to cut perfect circles
After Bacon in cooled, put the bacon in the cupcake tin by wrapping it around the sides of each cupcake hole.

Now start your egg mixture, We used:
In a medium bowl

Eggs whisk together well
Add Fresh basil, Salt & Pepper, A fresh jalepeno, and feta cheese! MMM
lightly mix it all together and pour it in each cupcake hole (Inside the little bacon and tortilla cup)

Bake about 18-20 minutes, let it cool, then top with tomato, more feta and basil if you'd like!

Then we went Kayaking!



We finished our evening at The Laughing Cat Restaurant in Ybor (one of our Fav's!) I had the gnocchi tri colori with filet mignon! YUM!
