Shrimp Ceviche Nachos

The other day we were looking through our posts and notice that we have never whipped up ceviche. It is one of my favorite dishes and it goes well with the hot summer days we are having right now. This dish is refreshing and health and will please just about anyone, unless you have shrimp issues. One of the best things about this dish, besides the amazing flavors, is that it's easy to make. You do not have to be a culinary expert to make this and have everyone rave about it. Here is the fruit of our labor. Ingredients: 1 lb deveined and peeled raw shrimp 4 limes squeezed 1 lemon squeezed 1/8 tsp lemon and lime zest combined 1 medium red onion small diced 1 cup small dice cucumber 1/2 bunch of cilantro chopped 1 avocado small diced 1 tbsp EVOO 1 1/2 serrano chiles seeded and small diced 1 large tomato small diced Tortilla chips Crumbling cheese Mexican blend shredded cheese Salt and pepper to taste Step 1 Chop up your shrimp and place in a shallow dish. Poor citrus juices over shrimp, mix well, cover, and let sit over night. The next day flip shrimp once to make sure they are all evenly cured. Step 2 Prep all your veggies the day before. Pull your shrimp out and add the rest of the ingredients and mix well. Let everything sit for another hour, the longer the better, so that the flavors come together. Step 3 Heat the oven to 400F. Place tortilla chips on cookie sheet and show them evenly with cheeses and bake until cheese it melted. This will not take long at all so make sure you watch them carefully. Step 4 Let chips cool for 2 minutes and then place ceviche on top. Now you have a delicious and healthy meal option. Some of you may say that cheese is not healthy but I beg to differ. Cheese is great for you in the right portions. Just make sure you do not go overboard with the amount of nachos you eat. You should not be putting so much cheese on the chips that you can not see them.
