Raspberry-honey Ginger London Broil

This was really good! We have really been into the farmers market lately and we found an amazing booth that sells creamy Delicious mouth watering honey! The company is Eden's Nectar (http://Edensnectar.com) We have tried the cinnamon creamy honey and the raspberry creamy honey... TO DIE FOR!!!!!! In this recipe we used the raspberry with some ginger and coated the London broil with it! We stuck it in our trusty cast iron pan and threw it in the oven! Shane served it with a soy-sesame rice! Of course we needed our veggies so we had some stir-fry style veggies, broccoli, green beans and red bell pepper! YUMM!!! Happy eating to ya!

MMMM! This recipe was my Idea (Mandi!) I LOVE sweet Swedish meatballs and I wanted Shane to make them a little different. So we went to the only people we trust to make an amazing meatball! Paulie O's Italian Gourmet (http://paulieositaliangourmet.com/) At our local farmers market! Then we went to our favorite Greek Goddess to get the Strawberry Rhubarb Preserves ALECA'S KOUZINA! (http://www.alecaskouzina.com/)When we came home Shane combined the two SO perfectly! It was the perfect amount of sweetness to tickle our taste buds! AMAZING! Then we served it with a fresh baguette, fresh sliced Avocado, and creamy Havarti cheese! If you'd like this recipe or any other one please see the contact info and email us! Happy eating to ya!

Creamy Pasta with Tomato Herb Sausage

Mascarpone cheese is an amazing gift to the chef. Creamy, subtle, with just a hint of sweet, and a dash of tangy.

I have some left over basil, spinch, and grape tomatoes from the last dish I cooked so I came up with this dish. Used some sweet Marsala along with a few other ingredients including a fabulous tomato herb sausage we found at the local grocery store.

It turned out exactly the way I wanted it.

If anyone is interested in the recipe please let me know. Also I am debating on whether or not to put recipes back up. I figured if someone liked the way a dish looked then they could ask me for the recipe but Mandi says people just want to see it up. I am not sure what I am going to do though.

Na an't exactly pizza

Mandi and I love to go to local fresh markets to see what they have on hand. Today we went back to a market that we love. The people we have met and the products they make are to die for. We are so very thankful that these folks are trying to keep the spirit of great cuisine alive. Today we decided to try some Italian sausage from Paulie O's Italian Gourmet. After eating their out of this world spicy Italian sausage we knew we had to make create a dish for it. We wanted something easy so here is what we came up with.

Naan bread, spicy Italian sausage, goat cheese, mozzarella, grape tomatoes, olive oil, and some oregano baked to perfection. The Italian sausage made this dish. The right amount of meat, fat, herbs and spices make these sausages out of this world. If you live in the area and want to try them out I will post their info at the end of this entry.

We accompanied the Naan with a spinach and basil pasta. We took some fresh basil, fresh spinach leaves, grape tomatoes, fresh diced garlic, a sprinkle of oregano, and sauted everything in some butter. Mandi threw in some whole wheat penne paste and topped it off with feta cheese and voila!

Shrimp and Andouille Pasta

Josh and Brittany came over for dinner and helped me prepare this dish which turned out awesome. We took creole sauce, cream, green bell pepper, andouille sausage, shrimp, fettuccine pasta and put together a very flavorful dish. Everyone loved it so much they were asking for seconds as soon as they finished their first plate. We served this up with some asparagus sauted in some cream butter and creole seasoning.

Pepper glazed steak with poblano cheesy rice

Mandi and I went to a local farmer's market about a week ago and picked up some home made 4 pepper jelly we loved. I decided to caramelize it on top of broiled flank steak and it turned out awesome. I have to make sure the lady who makes the jelly gets to see the pictures of the dish. Aleca Lazaradis makes the best 4 pepper jelly ever. A nice blend of flavors. I also served up some poblano cheesy rice. I roasted the poblano chilis, mixed them with rice, green chile, tomato, spices, and herbs, covered with a light layer of melted sharp cheddar. It all turned out amazing.

If you are interested in trying the 4 pepper jelly let me know and I will give you the makers information.

Bon appetit

Filet Mignon with Goat Cheese and Balsamic Syrup

This was the second dinner I cooked last night for Mandi and the family as part of the celebration of her birthday. I will have her post the pictures of the strawberry yogurt cake my mom made for her which was amazing. I have never cooked filet mignon before and it was very easy. We do not have a grill so I cooked it in a cast iron skillet then popped it in the oven to let the goat cheese melt on top a bit. Placed on a small bed of balsamic glaze and this dish was the talk of the night! Easy, yummy, and put a smile of people's faces. I think I am getting closer to those goals I mentioned earlier.

I would like to say again that without my wife I would not be inspired to cook these dishes. She truly gives me the spark I need to drive my passion I have for cuisine.
